toasted slivered almonds
2 teaspoons olive oil
6 Maui Taro Burgers, slightly thawed
1/4 teaspoon crushed red pepper
3 cloves garlic, minced
2 tablespoons grated fresh gingerroot
1 cup sliced scallions
1
1/2 cups sliced baby carrots
1 cup diced portobello mushrooms
1 medium tomato, diced
2 cups broccoli florettes
2 cups diced fresh pineapple chunks
1/4 cup diced nila grass
12 ounces snow peas
1/3 cup Mirin
2 Tablespoons tamari
Toast
almonds in dry pan over medium heat, shaking the pan and/or stirring
for about 2 to 3 minutes. Be careful not to burn. Set aside.
In a 12" wok or large electric skillet, heat oil and crushed
pepper over medium high heat 1 minute. Add taro burgers and cook,
for 5 minutes or until brown. Add Taro Burger, stirring frequently
and breaking apart, cooking 4 minutes, or until browned. Push
crumbled burger to one side, spray pan with oil and add garlic,
gingerroot, scallions, and carrots and cook 3 minutes. Add mushrooms,
tomato, broccoli, pineapples and nila grass. Cook 5 minutes, reduce
heat to low and add snow peas, mirin, and tamari, simmer 3 minutes,
sprinkle with almonds and serve.

teaspoon olive oil
2 cloves minced garlic
6 Maui Taro Burgers, frozen
Maui Garlic and Chile sauce
sliced tomatoes
Spicy Radish Sprouts
6 whole grain Tortillas, non-hydrogenated
Over
medium high heat, warm oil and minced garlic, 1 minute. Add Taro
Burgers and cook 4 minutes on each side, or until brown and crispy.
Mango
Relish
2 mangos, peeled and diced
1 cup chopped red bell pepper
2/3 cup chopped Maui onion
1 cup frozen corn, cooked and well drained
3 Tablespoons chopped cilantro
Juice of one lime
1 teaspoon Bragg Aminos
In a medium bowl, combine diced mangos bell pepper, onions, and
corn and cilantro. Drizzle w/lime and aminos. Refrigerate until
ready to serve and serve using a slotted spoon.
ASSEMBLY: Spread warmed tortilla with Maui Garlic and Chile
sauce. Divide each burger in half, place 1/2 Taro Burger on each
tortilla, top with mango salsa, tomatoes, sprouts and cilantro.

Vegan Thousand Island Dressing (recipe follows) Sauerkraut
Make
Vegan Thousand Island Dressing and set aside
Spray a 10" frying pan with oil spray and cook Taro Burgers
for 5 minutes or until crispy. Top the cooked burgers with Vegan
Gourmet cheese and place under broiler to melt. Spread rye bread
with dressing and top with burger. Add sauerkraut and
