Mori-Nu Tofu

 
Mori-Nu Tofu  

Mori-Nu tofu comes in several different varieties, from extra firm to soft and creamy and can be used to make everything from puddings to pies, from lasagna to tacos. In this segment, some top chefs show us how to use tofu as a replacement for meat, eggs, milk, cream and cottage cheese.

 

Fiesta Scrambler Adapted from Marie Oser's "Soy of Cooking"

  • 2 pkgs Mori-Nu Silken Firm Tofu
  • 1 tbsp olive oil
  • 3 ea scallions
  • 3 large cloves garlic
  • 1/3 cup chopped green bell pepper
  • 1 tbsp tamari or soy Sauce
  • 3/4 cup medium hot salsa
  • 1 tbsp lime juice
  • 1/4 cup chopped fresh cilantro

Drain tofu and pat dry. Grate tofu into a medium bowl and place in microwave for 2-1/2 minutes. Drain liquid that will be drawn from the tofu. Heat olive oil in a medium frying pan over medium high flame. Add scallions, garlic and bell pepper and saute for 3 minutes or until crisp tender. Add grated tofu and continue to cook for 5 minutes, stirring frequently. Stir in Tamari, salsa, lime juice and chopped fresh cilantro. Lower flame and simmer five minutes or until ready to serve.

Serve with warm whole wheat tortillas, taco shells or alone as a breakfast 'scramble". Makes 6 servings.

Mori-Nu Hawaiian Smoothie

  • 1 cup pineapple juice, unsweetened
  • 1 cup crushed pineapple (fresh or use one 8 oz. can)
  • 2 Tbsp apricot jam
  • 1-12.3 oz. pkg Mori-Nu Silken Lite Firm Tofu
  • 1 ripe banana

Combine all ingredients in a blender.
Whip until smooth. Chill or blend in a few ice cubes. Serve cold.

Makes 2 (10 oz.) servings.

Mocha Mousse Paulette Mitchell, “The Complete Soy Cookbook

  • 2 ½ cups mashed silken firm tofu
  • ½ cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 Tbsp. freeze-dried instant coffee granules
  • 1 tsp. orange zest
  • ½ tsp. ground cinnamon

Put all ingredients into food processor; blend until very smooth and creamy.
Spoon about 1/3 cup of the mixture into 6 small individual dessert cups. Cover and refrigerate for at least 1 hour before serving.
