Real Food Daily features organic gourmet
whole food cuisine prepared with no animal products, no dairy products,
no cholesterol, eggs, fats, sugars or refined flours. The food is, instead,
made of fresh vegetables, whole grains, legumes, beans, nuts, seeds,
fruits, natural condiments, sea vegetables and soy products. It is grown
by local farmers certified to be using organic farming methods.
Real Food Daily's menu offerings are naturally low in fat (many dishes
and desserts are fat free), has a hearty protein base and is high in
fiber. RFD uses only a pinch of sea salt and high quality oils such
as olive and canola, and only sparingly. Fresh herbs & spices add
a variety of gourmet flavors.
Ann Gentry is the chef/owner/food
educator/visionary behind RFD.
She brings 18 years of food experience to her many roles.Ann first became
interested in vegetarian cuisine in the late 70's while living in New
York City. In 1981, she fully realized food was a powerful curative
and embarked on her self-taught culinary education. She began combining
the essential elements of eastern macrobiotic teachings with her distinct
American culinary style to create what she terms, "gourmet whole
food cuisine."
Asked to private chef for celebrities
in Los Angeles, Ann honed her cooking skills as a private chef and caterer
from 1988 to 1992. In 1993 Ann opened Real Food Daily to rave reviews.
Ann also teaches cooking classes that are always sold out and has appeared
as a guest chef at The Canyon Ranch and The Pritikin Longevity Center.
She is currently working on the Real Food Daily cookbook.
What follows is a sampling of RFD's menu:
Miso Soup
Lentil-Walnut Pate
Topped with tofu 'sour cream' and served with wheat-free crackers
Cold Sesame Noodles
A bowl of chilled soba noodles, julienne vegetables, scallions &
sesame seeds in a velvety peanut sesame sauce.
NoCheez
A quartet of black bean dip, guacamole, carrot salsa and a dollop
of tofu 'sour cream' served with blue and yellow corn chips.
Red Sea Opener
Roll you own with two flavored whole wheat tortillas, humus, tabouli,
green salad, olives, tomatoes, cucumbers and tahini mint dressing.
Nori Maki
Sweet brown rice with tempeh, avocado, carrot, greens & umeboshi
rolled in nori served with daikon, ginger tamari dipping sauce, wasabi
& pickled ginger.
(Tempeh: traditional, Indonesian fermented soyfood made into a patty;
Umeboshi: a salted pickle plum which has been aged with shiso leaves
for several years; Nori: thin sheets of a dried sea vegetable; Daikon:
a long, while radish; Tamari: traditional, naturally made soy sauce;
Wasabi: a hot, green Asian mustard used in sushi and soups).
Yin Yang Salad
Finely cut carrot, celery, daikon, cilantro, three cabbages, romaine
& marinated baked tofu tossed in a ginger sweet peanut dressing.
Reuben Sandwich
Baked marinated tempeh on caraway rye bread with miso mustard spread,
sauerkraut and lettuce served with house salad and dressing.
R & B Burrito
Spanish rice, black beans, guacamole & tofu 'sour cream' rolled
in a sprouted whole wheat tortilla served with salad, carrot salsa
& more guacamole.
Love Triangles
Humus, tabouli & cucumbers rolled in an Indian curry whole wheat
tortilla served with house salad and tahini-mint dressing
Salisbury Seitan
Southern influenced baked 'wheat meat' cutlets drizzled with savory
golden gravy served with mashed potatoes and RFD's Caesar salad.
(Seitan: wheat gluten, made from whole wheat flour)
Seitan Fajitas
Homemade 'wheat meat' with onions, peppers & tomatoes served with
Spanish rice, black beans, guacamole, carrot salsa & three warm
corn tortillas.
L'il Big Bowl Chili
Red and Black Bean Chili simmered with vegetables and herbs &
a blend of fiery chilies topped with a dollop of tofu 'sour cream'
& served with southern style corn muffin and sweet potato &
tomato salsa.
