Tempting Tempeh Tostadas
Part Three - Howard joins Marie to make Cilantro Cream Sauce.
This rich textured tostada topping is quick and easy, dairy-free
and delectable!

Cilantro Cream Sauce
Make this quick and easy topping in advance, and chill overnight
for optimal flavor. 1 (12.3 oz. pkg) silken tofu
1/3 cup chopped yellow onion
1 large clove garlic, diced
1/3 cup homemade soymilk*
3 Tablespoons lime juice
3 Tablespoons chopped fresh cilantro
1 teaspoon dried cilantro
1/4 cup Red Star Nutritional Yeast
2 teaspoons Bragg Aminos
1/4 teaspoon adobo sauce
Blend tofu (use optional 24 ounce cup) in Tribest Personal Blender.
Add the remaining ingredients and blend until smooth. Chill overnight
for optimal flavor.

1 13.4 oz jar Wild Garden Red Hot Chile
Hummus
1 (15 oz. can) refried Black Beans w/jalapenos, heated through
Shredded green lettuce
Sliced ripe avocado

Tempeh Tostadas
12 servings
2 (8 oz.pkg) tempeh, cubed and steamed for 15 minutes
2 teaspoons olive oil
3 peeled cloves garlic, minced in Tribest personal blender
1/2 large red onion, chopped (about 1 cup)
1/2 medium red bell pepper, chopped (1/3 cup)
1/3 cup very coarsely shredded carrots
1 (14.4 oz can) Mexican Stewed Tomatoes
1/2 cup chopped fresh cilantro
1 Tablespoon Tamari
1 chipotle pepper* minced plus 1/2 teaspoon adobo sauce
1/2 cup white wine
Juice of 1 lime
1 Tablespoon Wholesome Sweeteners Blue Agave
*canned chipotles in adobo sauce
12 corn tortillas, sprayed lightly with olive oil & baked until
crisp
Heat oil, over medium high, in a large skillet or wok pan about
30 seconds. Add garlic, onions, bell pepper, and carrots and sauté
3 minutes. Add tempeh and cook 5 minutes, stirring and breaking
apart until crumbled and browning. Add tomatoes, cilantro, tamari.
chipotle w/adobo sauce, wine, lime juice, and agave nectar. Reduce
heat to medium low and cook mixture for 15 minutes.
