Tempting Tempeh Tostadas
Part One - Tempeh Tostadas are on the menu and they’re
hearty, healthy, and absolutely delicious. This festive dish is
perfect served buffet style. |
Once steamed, tempeh can keep refrigerated for up to 5 days, ready
to be used in place of unhealthy animal products.

Tempeh Layer
2 (8 oz.pkg) tempeh, cubed and steamed for 15 minutes
2 teaspoons olive oil
3 peeled cloves garlic, minced in Tribest personal
blender
1/2 large red onion, chopped (about 1 cup)
1/2 medium red bell pepper, chopped (1/3 cup)
1/3 cup very coarsely shredded carrots
1 (14.4 oz can) Mexican Stewed Tomatoes
1/2 cup chopped fresh cilantro
1 Tablespoon Tamari
1 chipotle pepper* minced plus 1/2 teaspoon adobo sauce
1/2 cup white wine
Juice of 1 lime
1 Tablespoon Wholesome Sweeteners Blue
Agave
*canned chipotles in adobo sauce
Heat oil, over medium high, in a large skillet or wok pan about
30 seconds. Add garlic, onions, bell pepper, and carrots and sautÈ
3 minutes. Add tempeh and cook 5 minutes, stirring and breaking
apart until crumbled and browning. Add tomatoes, cilantro, tamari.
chipotle w/adobo sauce, wine, lime juice, and agave. Reduce heat
to medium low and cook mixture for 15 minutes.
